Argentinian Rump

Halal Food London x Tom Hixson 

Tom Hixson are a fine meat procurer established in 1963 at Smithfield Market. They specialised in sourcing exceptional produce, and have recently expanded into the Halal market! I recently tried cooking with their halal black label Argentinian beef rump heart. The meat comes from grass-fed & free-range cows so it is some of the healthiest to eat.

The rump heart weighs 2.4kg and would comfortably make around 8-10 steak slices (depending on how thick you cut it!).

When cooking the steak, I researched a lot of techniques. I settled on a very simple one, which was to cut the steak in about 2cm slices and let it rest/ dry till it was room temperature. I then heated a griddle pan on high heat, and put the steak on the pan when it was very hot. I turned down the heat on the pan slightly after this. I also seasoned the steak with salt and pepper whilst it was on the pan. To get it medium I cooked it for around 3 mins on either side, but longer if you want it less red. After it was done, I served it with chilli flakes on top and my other side dishes.

Creamy mushroom sauce recipe

You’ll need:

  • 200g baby button mushrooms (or any other mushroom type that you prefer)
  • 2 cloves garlic
  • 1 tablespoon butter
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 300ml single cream
  • 300ml full fat milk


Wash & slice your mushroom into small pieces. In a pan on medium heat add your two cloves of garlic which have been thinly sliced, as well as a fat tablespoon of butter. Melt the butter & very slightly brown the garlic (should be browning from the edges, not fully brown). Then add your chopped mushrooms and cook them until they half in size (don’t brown them though). Then add your black pepper & salt. Continue browning the mushrooms until they are cooked. Then add the cream & milk. You can then continue cooking this for around 15 mins or until the sauce is at your desired thickness.


I’ve never had steak that has blown me away, so I was surprised when the steak I cooked myself did exactly that! I’m not an amazing chef so I know the taste was due to the cut and quality of the meat. If any of you are looking to impress some people for dinner then I would highly recommend this Argentinian Rump. I hope to try some more items from the Tom Hixson halal range soon- if everything is as amazing as this then I am impressed!
